- 1 box instant blueberry Jell-O
- 1/2 cup lemon juice
- 1 box instant cherry Jell-O
- 1 envelope vegan gelatin
- 1 cup milk (divided)
- 3 tablespoons granulated sugar
- 1/2 teaspoon pure vanilla extract
Instructions
- Prepare the Blue Layer: In a small bowl, mix boiling water with blueberry Jell-O until dissolved. Stir in lemon juice and let cool.
- Prepare the Cherry Layer: Repeat the process with cherry Jell-O using boiling water, allowing both mixtures to cool.
- Make the White Layer: Sprinkle vegan gelatin over 1/4 cup milk in a medium bowl. Heat remaining milk in a saucepan until simmering, then stir in sugar and vanilla extract.
- Combine: Pour the heated mixture over the gelatin and stir until dissolved. Cool for about 10 minutes.
- Assemble: Lightly spray shot glasses with cooking spray—add blueberry layer to each glass and refrigerate until set (about 15 minutes). Add white layer and refrigerate again (about 10 minutes), then finish with cherry layer and chill until firm (about 2 hours).
