  • 1 lb chicken breast, cut into cubes
  • 1 cup pineapple, cut into cubes
  • 1 cup jasmine rice
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add olive oil. Sear the chicken until golden brown (6-7 minutes), then remove and keep warm.
  2. In the same skillet, sauté onion, garlic, and bell pepper until tender. Add pineapple chunks and caramelize for 2-3 minutes.
  3. Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 15-18 minutes until the rice absorbs the liquid.
  5. Fluff the rice with a fork and fold in the reserved chicken. Garnish with green onions and sesame seeds before serving.
