  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 3 cups shredded mozzarella cheese
  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops, chopped
  • 1 cup lump crab meat
  • 2 cups fresh spinach, chopped
  • 3 cups marinara sauce
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles in boiling salted water until al dente; drain and cool.
  3. In a skillet with olive oil, sauté minced garlic until fragrant. Add shrimp and scallops; cook until opaque. Stir in crab meat and spinach until wilted; season.
  4. In a mixing bowl, combine ricotta cheese with Parmesan and half the mozzarella until creamy.
  5. In a baking dish, layer marinara sauce, noodles, ricotta mixture, seafood mixture, and repeat layers twice more.
  6. Top with remaining noodles and marinara sauce; sprinkle with mozzarella. Cover with foil and bake for 25 minutes; uncover and bake for an additional 15 minutes until bubbly.
