Ingredients
- 500 g Penne Pasta
- 400 g Shrimp (cleaned)
- 1/4 cup Olive Oil (extra virgin)
- 1 Lemon (juice and zest)
- 1 tsp Fresh Garlic (crushed)
- Black Pepper (to taste)
- 1 large Avocado (peeled and cubed)
- 250 g Cherry Tomatoes (halved)
- 3–4 Spring Onions (chopped)
- 1/2 cup Basil Leaves
Instructions
- Cook the penne pasta in boiling salted water until al dente. In the last few minutes of cooking, add the cleaned shrimp.
- Drain the pasta and shrimp using a colander and rinse under cold water if desired.
- In a small bowl, whisk together olive oil, lemon juice, zest, crushed garlic, and black pepper.
- In a large mixing bowl, combine the pasta mixture with cubed avocado, halved cherry tomatoes, chopped spring onions, and basil leaves.
- Pour the dressing over the salad and toss gently until all ingredients are well coated.
