Ingredients
- 2 pounds large shrimp (peeled, deveined, patted dry)
- 1 fresh pineapple (chopped into 1 inch pieces)
- 3 bell peppers (any color combo) (cut into 1 1/4 inch pieces)
- 1 red onion (cut into 1 inch chunks)
- 5 tablespoons olive oil (divided)
- 1 teaspoon cornstarch
- 1/3 cup red apple vinegar
- 1/4 cup canned pineapple juice
- 1/4 cup sugar
- 1/4 cup honey
- 2 tablespoons ketchup
- 1 tablespoon reduced sodium soy sauce
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ginger powder
- 1/4 teaspoon red pepper flakes
Instructions
- Soak wooden skewers in water for at least 30 minutes if using.
- In a bowl, whisk together the marinade ingredients; reserve 1/4 cup.
- Marinate the shrimp in olive oil and half the marinade for 30 minutes.
- Combine reserved marinade with olive oil and toss veggies to coat.
- Thread shrimp and vegetables onto skewers alternately.
- Grill or bake until shrimp is pink and cooked through.
