Ingredients
- 1 cup toasted whole cashews
- 1 cup toasted macadamia nuts
- 2/3 cup unsweetened shredded coconut (divided)
- 1 cup large medjool dates (pitted)
- 1 cup dried pineapple (diced)
- 1/4 tsp coconut extract
Instructions
- Preheat the oven to 350°F.
- Toast cashews, macadamia nuts, and 1/3 cup shredded coconut on a baking sheet for 5 minutes; stir and toast for another 5 minutes until golden.
- In a food processor, blend toasted nuts into a coarse meal. Add pitted dates, dried pineapple, remaining coconut, and coconut extract; blend until combined.
- Chill the mixture in the refrigerator for about 30 minutes.
- Form the mixture into balls using a tablespoon and roll in remaining toasted coconut.
- Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 1 month.
