  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar (for filling)
  • 8 oz semi-sweet chocolate (for ganache)
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine eggs, milk, vegetable oil, and vanilla. Add to dry ingredients and mix until smooth.
  4. Gradually stir in boiling water until well combined; the batter will be thin.
  5. Pour evenly into prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. Cool in pans for about 10 minutes before transferring to a wire rack.
  7. For the filling, cook strawberries with sugar and lemon juice over medium heat until softened; thicken with cornstarch slurry and cool.
  8. For the ganache, heat cream until boiling and pour over chopped chocolate; let sit then stir until smooth.
  9. Assemble by layering cake with strawberry filling between layers and ganache on top.
