- 6 cups strawberries (cleaned, tops removed)
- 4 cups lemon juice (bottled or fresh)
- 6 cups granulated sugar
Instructions
- Prep your water bath canner and pint jars while heating the jars gently.
- Puree strawberries in a food processor until liquefied and transfer to a large saucepan.
- Stir in lemon juice and sugar; heat the mixture over medium heat until it reaches 190-200°F without boiling.
- Fill hot pint jars with the mixture, leaving 1/4 inch headspace. Secure lids fingertip tight.
- Process in boiling water for 15 minutes. Allow sealed jars to cool on the counter for 12-24 hours.
