- 1 small shallot (minced)
- 1 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1 1/4 lb lean ground beef
- 1/4 cup tomato paste or ketchup plus 1 tablespoon vinegar
- 1 cup crumbled blue cheese

Instructions
- Preheat your oven/broiler to 450°F or air fryer to 350°F.
- In a skillet over medium heat, sauté olive oil, shallot, salt, and pepper until soft. Set aside.
- In a bowl, mix ground beef with sautéed shallots and Worcestershire Ketchup until just combined.
- Divide meat into four portions, flatten each into a patty, add blue cheese in the center, then seal and shape into burgers.
- Broil on a pan for 8-10 minutes or air fry for the same time until cooked through.
