  • 3 green onions, chopped (divided)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce (gluten-free if needed)
  • 1 1/2 cups chicken broth
  • 12 tablespoons olive oil or sesame oil
  • 1 tablespoon brown sugar or honey

Instructions

  1. Prepare ingredients by dicing chicken, chopping bell peppers and green onions, and mincing garlic and ginger.
  2. Heat oil in a large skillet over medium-high heat, then sauté garlic and ginger until fragrant.
  3. Add diced chicken to the skillet and cook until golden brown (about 5-6 minutes).
  4. Stir in bell peppers and half of the green onions; cook for an additional 2 minutes.
  5. Mix in pineapple chunks, then pour in rice, soy sauce, chicken broth, and brown sugar/honey; stir well.
  6. Bring to a gentle boil, then reduce heat to low, cover with a lid, and simmer for 18-20 minutes until rice is tender.
  7. Fluff with a fork and garnish with remaining green onions before serving hot.
