  • 1 red bell pepper, thinly sliced

  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • Juice of 1 lime
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon honey
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup crushed peanuts
  • 1 tablespoon sesame seeds

Instructions

  1. Cook the rice noodles in boiling water according to package instructions until al dente. Drain and rinse with cold water.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, lime juice, ginger, garlic, honey, and red pepper flakes until smooth.
  3. Toss the cooled noodles with the peanut sauce until evenly coated.
  4. Add the sliced vegetables (red cabbage, carrots, bell pepper) and mix gently to combine.
  5. Garnish with crushed peanuts and cilantro before serving. Chill for at least 30 minutes to enhance flavor.
