Ingredients
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tbsp butter (melted)
- 2 (8 oz) pkgs cream cheese (softened)
- ½ cup granulated sugar
- ¼ cup sour cream
- 2 eggs (room temperature)
- 1 ½ cups fresh strawberries (chopped)
- 5 tbsp sugar
- 3 tbsp water
- 1 tbsp lemon juice
- 2 tsp cornstarch
Instructions
- Preheat the oven to 350°F and line an 8×8 or 9×9 pan with parchment paper.
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of the prepared pan.
- In a large bowl, beat cream cheese, sugar, sour cream, and vanilla until smooth. Add eggs one at a time, mixing just until combined.
- Pour the cheesecake mixture over the crust and bake for 25–35 minutes until slightly jiggly in the center. Cool on a wire rack for about 1–2 hours and then refrigerate for an additional 3–4 hours before cutting.
