- 1 1/2 pounds boneless skinless chicken thighs or breasts
- 3–4 tablespoons Thai red curry paste
- 1 (14-ounce) can full-fat coconut milk
- 1/2 cup creamy peanut butter
- Juice of 1 lime
- 1 mango, diced
- Roasted peanuts for garnish
Instructions
- Prepare the mango and jalapeño by dicing them. Set aside.
- For the instant pot: Add chicken, curry paste, ginger, oil, coconut milk, soy sauce, peanut butter, and lime juice. Seal and cook on high pressure for 15 minutes.
