  • 3/4 cup feta cheese (crumbled)
  • 1/2 cup olive oil
  • 4 tbsp lemon juice
  • 3 tbsp red apple vinegar
  • 2 tsp Dijon mustard
  • 2 garlic cloves (minced)
  • 3/4 tsp oregano
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • black pepper

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, red apple vinegar, Dijon mustard, minced garlic, oregano, red pepper flakes, salt, and black pepper until well blended.
  2. In a large mixing bowl, combine cannellini beans, kidney beans, chickpeas, diced cucumber, halved cherry tomatoes, diced bell pepper, chopped parsley, sliced red onion, and chopped basil. Gently mix to incorporate.
